Great Food Truck Race features local caterer

Atlanta's culinary team NOLA Creations, will be competing on the upcoming season of The Great Food Truck Race. It kicks off June 9. NOLA Creations are from New Orleans and have been in the Atlanta area for a few years now. They stopped by Good Day Atlanta to share their jambalaya recipe for viewers to try at  home.

Ingredients: Peppers, onions, celery, par boiled rice, andouille sausage, chicken breast, 21-25 shrimp, tomato paste, Blackening seasoning, creole seasoning, chicken stock, white wine garlic, black pepper, thyme, oregano, basil and parsley.

 

Heat 1/2 cup extra virgin olive oil, 1/4 cup of onions, peppers and celery in pan. Cool veggies until they are translucent. Add 3 tbsp NOLA Creations Blackening seasoning. Add 2 tbsp NOLA Creations creole seasoning. 1 tbsp is salt, black pepper, granulated garlic, dried oregano, dried thyme and dried basil incorporate thoroughly. Add in 1 cup of tomato paste and incorporate 6 cups of cooked rice and 3 cups of water and stir in completely. Once water has reduced and rice is fully incorporated, remove pot from fire and serve.
