“Asian Delight”
Serves 4 as an entree
Ingredient List:
Rice:
2 cups jasmine rice (Two Brooks Rice), washed and drained
3 cups chicken stock, hot  
Star Anise, 2 pods
Cinnamon, ¼ quill
Garlic, 2 cloves minced
Ginger, 1 tablespoon minced
Onion, ½ cup diced
Pork Fat, 1 tablespoon (chicken, duck, or olive oil is a fine substitute) 
4 links Sweet Chinese Sausage (Lap-Xoung), cut into 1 inch logs
Condiments:
Cilantro, 2 tbsp chopped
4 large farm eggs
Soy Sauce, as desired
Salt
Pepper

Method:
For the rice,
Turn your oven on to 425*.  In a medium sized pot over low heat, start by sweating the onions, garlic, and ginger in the chicken fat without any color, 4-5 minutes.  Add the rice to the pot and toast for 1-2 minutes.  Add the sausage, star anise and cinnamon and the hot stock and bring the liquid up to a boil.  Cover the pot with aluminum foil and make sure it’s completely sealed.  Place the pot in the oven for 15 minutes.  When the rice is done let it sit, without opening the lid, for another 15 minutes to finish cooking.
While the rice is finishing, fry the eggs in a pan sunny side up.  Season the rice with salt and pepper to taste and divide the rice into 4 bowls, top off with the fried egg, sprinkle the chopped cilantro over the rice, and drizzle some soy sauce over the top. Enjoy!
