Preparing for National Fishing Day with Charlie Killmaster

June 18 is National Fishing Day! Charlie Killmaster from Georgia DNR stopped by the show to give some tips on great places to fish in the Atlanta area, as well as to give a great lemon caper fish recipe. For more information on how to purchase a fishing license click here.

Lemon-caper fish

Ingredients:

~8 ounces of fish filets

Rice flour (enough to lightly coat fish)

Salt and pepper to taste

1 small shallot, finely chopped

3 tablespoons olive oil

2 tablespoons butter

1 cup dry white wine

Juice of one lemon

1 tablespoon of capers

Lemon slices and parsley for garnish

Method

Sauté the shallot in olive oil until lightly browned and caramelized, then remove from pan and set aside. With the skillet still hot, pat the fish filets dry with paper towels then lightly coat in rice flour. Sear the fish until golden brown on each side, about 2 to 4 minutes per side. Plate the filets and place in a warm oven or cover with foil while the sauce is prepared. With the pan still hot from searing the fish, deglaze by adding the wine and lemon. Add the butter, capers, and caramelized shallots to the pan and reduce the sauce over low heat until thickened. Pour the sauce over the filets and garnish with parsley and a lemon slice.
