Burgers with Buck: West Egg Cafe's PB & J Burger

It's a PB & J, but it's not what you're thinking.  There is no peanut butter or jelly on the PB & J Burger at West Egg Café.

The 'P' stands for pimiento cheese.  Not the store bought stuff your mom spread on bread, put in a brown bag, and sent you off to school with everyday.  Remember the disappointment?  A traditional PB & J would have probably been a better option.  I digress, the pimiento cheese at West Egg Café is home made from scratch.  They roast the peppers in house and use sharp cheddar cheese, and believe me, you can taste the difference.

The 'B' stands for bacon.  Their bacon is thick cut and pecan smoked, and let's be honest...what burger, sandwich, or really anything a human can consume is not better with bacon it?

The 'J' stands for jam...not strawberry or grape or even peach, but tomato.  And this is the key.  The tomatoes are cooked down with jalapeno, ginger, cumin, and cloves.  The 'J' provides some serious flavor.

If there was another 'B', it would stand for the bun.  It is a brioche bun made fresh daily by sister company, TGM Bakery.

Changing the subject only slightly, they utilize that pimiento cheese in the their wonderful pimiento cheese and bacon omelet.  You may remember from the good ole days of #BreakfastWithBuck, I certainly do.
