Lobster & crab grilled cheese
*Lobster 1/2 lb cut into large dice
*Lump crab meat 1lb
*Dukes mayo 3/4 cup
*juice of one lemon
*Paprika 1 teaspoon
*S&P to taste
*pullman loaf bread cut into small dice 1.5 oz
*Sliced sourdough bread 14 slices
*Fontina cheese 14 slices
1. Fold lobster, crab, 1/2 cup of the mayo, seasoning , and diced bread until incorporated.
2. Place 3oz of the lobster & crab mixture on one slice of sourdough bread, cover with 2 slices of fontina a cheese, and top with a slice of sourdough to make a sandwich.
3. Use the remaining mayo to spread onto the outside bread slices of the sandwich.
4. Heat the sandwich using a nonstick pan coated with butter until golden brown on both sides. Slice and enjoy!
