RECIPE: Holiday peach cobbler with 'Aunt Evelyn'
ATLANTA (FOX 5 Atlanta) - Looking for a great Christmas dessert to add some spice to your holiday feast? Evelyn Bruce has a treat for you!
The south Georgia native, known as "Aunt Evelyn," says the key to a good cobbler is real butter, rich spices and lots of love.
Ingredients:
- 3 Cups sliced Peaches
- 2 Cups Sugar
- 1 Teaspoon Cinnamon
- 1 Teaspoon Nutmeg
- 1 Tablespoon Vanilla Extract
Crust:
- 21/2 cups All-Purpose Flour
- 3/4 cup Shortening
- 1/2 Tsp. Salt
- 1/2 cup Ice cold water
- 1/2 stick Butter
Directions: Combine peaches, sugar, spices, and vanilla in a large pot, bring to a boil and let simmer until peaches are well cooked. About 20 minutes. Set aside to cool. Pour into 9 inch round pie tin or pie plate, cover with strips of crust forming a lattice design. Add pats of butter atop of crust, sprinkle with sugar and a small amount of cinnamon. Place in a 375 degree oven and bake for 40 minutes or until crust is golden brown. Serves 6.
Crust: Mix flour and salt in medium bowl. Cut in shortening with a fork. When well mixed particles are size of small balls. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is blended in. Form a large ball and roll out dough on a lightly floured board. Cut into 3/4 inch strips and set aside.
