Huli Huli Chicken | Fox Bros BBQ
Serves 12; Approx 4 Chicken Thighs
3 Gallons of Water
3 Cups Salt
3 Cups Brown Sugar
Huli Huli Base
1 Cup Brown Sugar
3/4 Cup Rice Wine Vinegar
1 Cup Pineapple Juice
3/4 Cup Soy Sauce
1/4 Cup Dark Soy Sauce
2 Fingers of Ginger, shaved
5 Star Anise
4 Cinnamon Sticks
1/3 Cup Sherry
2 TBSP Toasted Cardamom Pods
Bring to a simmer and keep at a simmer for 2 hours over low heat and let cool
Once cool add the following ingredients:
1/2 Cup Chopped Cilantro
1/4 Cup Diced Peppadews
1/4 Cup Diced Red Onion
1/4 Cup Diced Pineapple
1/4 Cup Diced Navel Orange
For the brine bring to a boil and let cool down. Once completely cool, add chicken thighs and brine for 3 hours.
After 3 hours take chicken out of the brine and place in huli huli marinade over night, make sure to set aside some huli huli marinade to dress the chicken once its cooled
The next day, grill the chicken and once cooked to 165, plate and dress with the remaining sauce/marinade
