Amicalola Falls State Park Sends Guests on Aerial Adventure: 

It's already one of Georgia's most loved and visited state parks, and now guests to Amicalola Falls State Park in Dawsonville have a thrilling new reason to plan a visit.

 

The new Aerial Adventure Park at Amicalola Falls State Park & Lodge officially opened Thursday, September 15, with a ribbon-cutting ceremony and tour of the attraction.  Built by American Adventure Park Systems, the Aerial Adventure Park includes 11 zip lines and three suspension bridges, giving visitors breathtaking views of the state park.

 

Good Day Atlanta's Paul Milliken spent the morning up in the trees, getting a first-hand look at this exciting new addition to North Georgia.

Quinoa & Black Beal Salad

1 c dry quinoa

2 15oz cans black beans

2 large bell peppers, chopped (your color preference)

1 small red onion, diced (for less oniony flavor, try green onions and stick to about ½ - ¾ cup)

2 cans corn (if in season and 1 slice right off the cob and add it raw or 1 cup thawed frozen corn)

¼ cup parsley chopped

¼ cup cilantro, chopped

 

½ cup extra virgin olive oil

½ cup balsamic vinegar

Juice of ½ lemon (about 1 Tbsp)

1 tsp chives, chopped

Black pepper to taste

 

Veggies:  Add or substitute chopped seeded cucumber, chopped avocado, or any chopped veggies of choice

Grain: Prepare quinoa with vegetable stock for flavor; try a different grain like faro or couscous

Bean: Substitute with edamame, chick peas or your favorite beans

Flavor: Substitute your favorite herbs

 

Prepare quinoa according to package directions (rinse, drain, cook)

Rinse and drain back beans

Combine quinoa, pepper, corn, black beans, onion and hrbs

Add dressing to taste

Stir to combine

Add salt and pepper to taste

 

Serve as a hearty side dish

Add chicken, grilled shrimp or roasted tofu to increase protein

Serve on a bed of spinach
