Black Pepper Tagliatelle 'Carbonara'

For the fresh black pepper tagliatelle:
10 yolks to 1000g of '00' flour
1oz ground pepper
Knead by hand and let rest for 1 hour
Roll out pasta to about 1/8 inch thickness and cut into strips.
For the cured egg yolks:
1oz salt 2oz sugar
Cover yolks in salt and sugar mixture for 24 hours, rinse and dry.
For the dish:
1 raw egg yolk
16oz cooked pasta
2oz ham hock broth
1 bunch chives
1 cured egg yolk
In a sauté pan brown one ounce of butter and add ham hock broth. While the broth starts to simmer in the pan, grate 2 ounces of Parmesan into the pan and add the pancetta. Add the cooked pasta, more butter and chives. When ready to serve, finish the pasta with additional Parmesan, grated egg yolk, and the raw egg yolk on top. Taste and adjust seasoning to your liking.
Pro tip: Break the yolk in the pasta dish in front of friends while hot.
