“Hidden Gems” Week: Good Day Explores Georgia’s State Parks

It’s the 85th anniversary of the Georgia State Parks and Historic Sites system – and to celebrate, Good Day Atlanta is going on a week-long tour of some of our area’s most beautiful and unique attractions.

Right now, Georgia State Parks is encouraging visitors to go on a “treasure hunt” – searching for the Hidden Gems of Georgia.  There’s a complete list of the “hidden gems” on the Georgia State Parks website, and it includes the Prohibition-era moonshine truck at Amicalola Falls State Park (in Dawsonville), the little-known cemeteries at Panola Mountain State Park (in Stockbridge), and the hidden homesteads at Red Top Mountain State Park (in Acworth).  Many of these “gems” are unknown to even frequent State Park visitors, and some exist on little-traveled trails that are easy to overlook.

6 eggs

¼ cup of relish

2 tablespoon of Diced red onion

½ cup of Sriracha Mayonnaise

1/2 cup of lump crab meat

Toppings

½ cup Lump Crab Meat

1 teaspoons of Dill

2 teaspoons of lemon juice

Salt & Pepper

Paprika

Old Bay Cajun Seasoning

 

Directions

Step 1: Place eggs in a medium pot of boiling water for 4-5 minutes (this allows eggs yoke to cook fully with bright yellow yokes) immediately after drop cooked eggs in a cold ice bathe.

Step 2: Peel eggs

Step 3: cut eggs into ½

Step 4: Separate eggs yoke from the egg white, place the egg whites shells on a plate and eggs yoke in the bowl.

Step 5: Add Relish, Red Onions, Sriracha Mayonnaise, & Crab Meat into bowl with Eggs Yoke (Mix with hands or food processor until smooth)

Step 6: Place mixture into piping bags and pipe the mixture into egg white.

Topping

Step 7: Mix crab meat, Dill, Lemon Juice, a pinch of salt & pepper all together

Step 8: Place a mound of crab meat on top of piped egg mixture.

Step 9: Finish the dish with a sprinkle of Paprika & Old Bay Cajun Seasoning on top of Deviled Eggs

SERVE DISH IMMEDIATELY OR CHILLED, ENJOY!!!
