This year's McDonough Caribbean Cultural Festival is happening Saturday, June 20th from 1:00 p.m. to 8:00 p.m. at Alexander Park in McDonough. The event is one of two big festivals presented by the Caribbean Association of Georgia (the other is the Atlanta Caribbean Cultural Festival in August) Saturday's schedule includes live music and entertainment and health screenings, and of course there are plenty of traditional Caribbean dishes to sample.

Maya Steakhouse | Prime Bone In Ribeye
Prep Time 60 minutes | Servings 2 to 4 people
-2 prime bone in ribeye 22 ounce each
-4 tablespoons olive oil
-2 sprigs fresh rosemary
-4 sprigs fresh thyme
-2 sprigs fresh oregano
-2 teaspoon kosher salt
-1/4 teaspoon pepper ‘butcher ground'
-1/4 teaspoon granulated onion
-1/4 teaspoon granulated garlic
-1 teaspoon seasoned salt ‘McCormick'
-4 oz melted salted AA butter
rub the steaks with olive oil and put aside if possible for one hour with the fresh herbs to marinade, sprinkle some salt-pepper mix and pan sear for about 6 minutes on each side depending on desired finished temperature. Brush lightly with butter while cooking. Slice thin and serve with………
-16 jumbo asparagus, trimmed, peeled and blanched for 6 minutes
-3/4 cup hollandaise
-1 lb colossal crab meat lightly heated with olive oil and 1 teaspoon of salt mix
-8 thick slices of local bacon seared on each side for two minutes
-4 ounces blue cheese crumbles ‘Valdeón Spanish Blue'
-4 egg yokes
-2 tablespoon white wine
-8 ounces clarified butter unsalted
-1/2 teaspoon worcestershire sauce
-1/2 teaspoon Tabasco
-1 tablespoon lemon juice
-1 teaspoon salt-pepper
-1 teaspoon white pepper
on a double boil beat egg yokes until triple volume, add melted butter gradually then remaining ingredients. keep at room temperature
