Burgers with Buck: Serpas

He calls it, Sexy Industrial.

I’m not sure if Serpas chef and owner Scott Serpas coined the term, but I’m giving him full credit for it.

Serpas, which will celebrate its 10th anniversary in Atlanta’s Old Fourth Ward next year, was O4W before O4w was cool. Known for delicious Louisiana inspired fare, it may surprise you to find out that there’s really nothing Cajun about their signature Big Papa’s Burger. Instead, it is just a really, really good burger that can be ordered with a single patty, or a double if you roll like #BWB.

Less is more might describe Big Papa’s Burger. Make no mistake, there is no shortage of quality ingredients and delicious flavors, but it is not over done with toppings for the sake of toppings. Every ingredient serves a purpose, and all you have to do is take one bite and that purpose becomes quite clear. In between the house made, toasted bun sits one or two five ounce patties (brisket, ground chuck, and short rib blend), topped with a homemade red wine sauce, lettuce, bacon, cheddar cheese, caramelized onions and house made pickles. It is also served with a heaping helping of house fries.
