Vidalia Onion Festival featured recipes

The Vidalia onion is Georgia's official state vegetable and if you've lived here long enough you know there are hundreds of ways to fry, saute and roast them.

This weekend Publik Draft House Executive Chef James Liles is showing off his onion variety making skills at the annual Vidalia Onion Festival. Check out the delicious recipes below!

Vidalia Onion Pimento Grilled Cheese with Vidalia Onion Agrodolce


  • 16 Slices of Vidalia Onion Bread - Recipe Follows
  • 2 C of Vidalia Onion Agrodolce - Recipe to follow
  • 8 C of Vidalia Onion Pimento Cheese - Recipe to follow
  • 16 C of Vanilla Ice Cream
  • 4 C of Malted Milk Powder
  • 8 C of Whole Milk
  • · 3 C carmelized Vidalia Onion Puree

Vidalia Onion Bread


  • 2 Packages of Active Dry Yeast
  • 4 Tbl White Granulated Sugar
  • 3 C of 110 F water
  • 4 tsp Kosher Salt
  • 4 Tbl Vegetable Shortening
  • 8 Tbl Spoon Diced Vidalia Onion
  • 7 C High Gluten Four (Bread Flour)
  • 4 Tbl Carified Butter

Directions: In a large mixing bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.Stir salt, shortening, minced onions, oregano and 2 cups bread flour into yeast mixture. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. Divide dough in half into seperate bowls. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour. Stir dough to deflate and place it into a lightly greased 9x5 inch loaf pans. Cover with a damp cloth and let rise until the top of the dough is within 1/2 inch of the top of the pan, about 40 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C). After loaf has risen, arrange onion slices on top of the loaf. Pour melted butter over the slices and bake in preheated oven for 35 to 40 minutes, or until golden brown. Remove from pan to cool on a wire rack.

Vidalia Onion Agrodolce


  • 2 C of Sugar
  • 4 C Apple Cider Vinegar
  • 1 C Vidalia Onion Puree
  • TT Salt
  • TT Pepper

Directions: Heat sugar and water in a small saucepan over medium-low heat for 5 minutes, until it becomes a noticeably deeper shade of brown. Add the vinegar and continue to cook, swirling the pan a few times, for about 15 minutes, until the sauce has thickened to the consistency of thin syrup. Remove from heat, let cool, and add a good pinch of both salt, pepper, and puree .

Vidalia Onion Pimento Cheese


  • 2 roasted red peppers
  • 1 lb of grated sharp cheddar cheese
  • 4 oz cream cheese
  • 6 tbl mayo
  • 2 tsp red chili flakes
  • juice of one lemon
  • .5 c Vidalia Onion Puree

Directions: Gently mix all ingredients & season with salt and pepper to taste

Carmelized Vidalio Onion Milkshake


  • 16 C of Vanilla Ice Cream
  • 4 C of Malted Milk Powder
  • 8 C of Whole Milk
  • 1 C of carmelized vidalia onion puree

Directions: Combine ingredients in blender and blend on high until all ingredients have incorporated.

Method for Grill Cheese:

Toast onion bread on griddle/flattop until browned. Apply pimento cheese and agrodolce and continue to heat on bothsides until pimento cheese is hot.
