Whatever the emotion, food can get you in the mood. Whether it's what you're making or how you present it. With this being the weekend of love, Le Cordon Bleu Executive Chef Kyle Reynolds has a couple of aphrodisiac-inspired dishes to help spice up your romantic celebration! 

Oysters with Passion Fruit Mignonette and Mint Caviar


  • 2 dozen Fresh Oysters in the shell
  • Passion Fruit Mignonette (see below)
  • Mint caviar (see below)

Method of preparation:

1. Shuck the oysters and place on a bed of ice. Add a teaspoon of the mignonette and garnish with the mint caviar.

Passion Fruit Mignonette


  • 3 oz. unsweetened passion fruit juice
  • 1 Tbsp. shallots, minced
  • ? tsp. fresh cracked black pepper

Method of preparation:

1. Combine the passion fruit, shallots, and black pepper in a small bowl.

Cucumber Mint Caviar


  • 1 C. cucumber juice
  • 1 oz. mint
  • 1 tsp. sodium alginate
  • 1 tsp. calcium chloride
  • 2 C distilled water

Method of preparation:

1. Blend the cucumber juice, mint, and sodium alginate until the leaves are pureed.

2. Strain through a fine mesh strainer and chill in the refrigerator overnight, to allow the bubbles to dissipate.

3. Crush the calcium in a mortar and pestle and blend well with the distilled water.

4. Place the mint mixture in a squeeze bottle and squeeze it out, one drop at a time, into the calcium mixture.
